    I've finished the game?

I've finally collected enough tomestones and nuts to get all my gear up to ilevel 600 (except weapon).
Now I feel like there's nothing left to do. I have enough gil, so gathering and crafting have no purpose. I was collecting MGP for the pod mount, only to discover that I also need to do savage content to get it, but there's no way I'm going to manage any savage runs, so is there any other reason to log in?

It's not savage content you need to do to unlock the pod 602, it's unlocking the NieR alliance raids in ShB.

Besides I don't believe you've truly finished the game, but I suppose endgame will differ from one person to another.

If you haven't done Savage than you haven't done Ultimate.
And if money is the only reason you ever looked at crafting and gathering then you're probably missing a lot from those as well.
    There's story to every class.

I don't think you've anywhere nearly completed the game.

"MMOs don't work like that" is the short answer.

If however (current) max level and (current) max iLvl are the only concrete goals you've set for yourself then sure you're personally done but you haven't "finished" the game by any actual metric.

In this game, you set your own goals, so it depends if you have reached your goals. Some common goals.
    1. Finish the main story quest.
    2. Finish all quests, class quests and beast tribe quests.
    3. Play with glamour and farm glamour for glamour sets.
    4. Roleplay.
    5. Socialize and do whatever free company members want to.
    6. Try all content types once.
    7. Beat the latest extreme, savage and ultimate raids.
    8. Beat all the old ones too (far less common).
    9. Collect all Triple Triad cards.
    10. Collect all minions.
    11. Collect all mounts.
    12. Get all Achievements (not actually going to succeed).
These goals range from casual to taking all of your time.

In other news, there is no technical debt from 1.0.
"We don't have ... a technological issue that was carried over from 1.0, because ARR was meant to kind of discard what we had from 1.0 and rebuild it from the engine."

If all you wanted out of the game was the current non-savage tier level for one job. Then no.

However as others have said there is boatloads of other content to engage in. Not the least of which is the stories and leveling experience of every single other job.

EDIT: That is not to say I'm telling you that you're not done if you feel you're done. If that's all you wanted out of the game, that's fine.

    - Get all relics from all expansions
    - Get Necromancer in PotD
    - Get a House
    - Decorate said house
    - Garden in said house
    - Rank in CC
    - Get all old EX/SVG mounts

    There's plenty to do.

Personally, I just PVP (I am working on the mount for Onsal Haakir) and constantly [try to] adjust furniture in my FC and personal houses, so I could confidently recommend doing... well, PVP, and maybe hanging out at an FC or something and trying a bit of the social side of the game (I'd say, come to mine, but it's basically just a few friends and myself, so that wouldn't do you much good (although we could use a little more fur around the estate), but you could probably ask around for a friendly FC that's hosting an event or something and wouldn't mind a guest to hang out)?
But if those don't interest you, even on a casual level for PVP, and you're not interested in going after or collecting something else that the game offers, then, I suppose there's really not much left to suggest. Sadly, I can't think of FFXIV being much excitement for someone who seeks more to go after in the endgame for a given class.
