Yeah I dont much care for it personally, but would be fine if people could just go with whatever without hassle.
Yeah it's strange how the visible ranks go up to Storm/Serpent/Flame Champion but do not actually progress beyond captain. I think the only reason they could feasibly give us is "oh the higher ranks have more obligation to the grand company and we don't want to saddle players with that" or something like that.
Its so annoying that i can collect all 3 horses but only use 1 at a time

Except maybe lore/world building - the Grand Companies are the volunteer militaries of the three cities, and, well, there is a reason military personnel wear uniforms (to identify each other on the battlefield). Hence, rules of war mean you cannot wear a uniform of another nation if you are not a member of that force (as in, enlisted or commisioned), as doing so otherwise falls into the false-flag concept (and all the legal and ethical ramifications that has). This is copied straight from real life, where most countries have laws prohibiting wearing of military uniforms unless you're actually a serving member of their forces.
Yes this is a video game and there is greater scope to break these real-life rules, but SE take their world-building very seriously, and thus lore is refelcted in gameplay as well, and this is merely one example. Thus, I do not see SE changing this I am sorry to say.

just make a one-off quest or something where you gotta reach captain of all 3 because they have shown little intent/desire to add ranks further than that. especially since they have the grand company of eorzea now

As of the end of Endwalker, aren't they all considered the "Grand Company of Eorzea" where each faction is essentially on each others side? The Grand Companies haven't been relevant in years. Mostly because we haven't even been in Eorzea for the MSQ since Stormblood, but even before then, our GC membership has literally never meant anything, other than choosing where we first meet Biggs and Wedge. It'd be nice to see it actually matter at some point, but I'm not counting on it.
