Gotta swing it as a couch-co-op game. It should allow me to play with my wife, and my mistress.
There's only three of us, so we'd need to have an AI buddy to join us in our fun.

You're under the mistaken assumption that only soloers use the Duty Support/Trust systems. There are plenty of people who also do multiplayer content that utilize the systems. And this sort of idea goes along with the dev desire to have XIV be something you can play solo or with friends. More options are healthy because people can choose to engage with the content in the way most comfortable for their playstyle and situation.

I feel like people just default to pushing back on any sort of compromise to make anyone happy....even if the compromise is just adding on more options. It is very odd sometimes. Woohoo internet!

Well I never wanted to solo a dungeon actually I always wanted the trust system to be something I could use to 2 or 3 man a dungeon. Then whoever I am playing with, usually my wife but sometimes a guild member, we can hop into a dungeon.

Who does it hurt to have it be more variable and flexible? Why are more options bad?

Since this isn't likely ever to be a thing, I think a better direction to investigate is BLU. Through most of the early game ARR and possibly HW, BLU is probably perfectly capable of carrying some extra weight in a synced 3-player run. Duos might be pushing it, tho.

Yoshida has adressed this request in one of the recent Live Letters. TLDR: Designing AI to interact with one player is fine, designing AI to interact with multiple players is not. They have no plans to invest into such system.
