The landscape method is more popular because majority of users use old TN based monitors.

The only real games where having such wide ratios will help you would be RTS type games.

Shooting games? No unless you're quite a good distance from the screen to see all three monitors at once or constantly move your head left or right your head will often be focused at the center screen and by the time you see someone on the far right or left screen you'll be shot down.

There's also Game UI, some game don't support such wide ratios properly and can have the UI too far apart. For example, health bar on the upper left corner of the left screen and ammunition on the lower right corner pf the right screen.

Then there's desk space but that's self explanatory.
I was getting at kinda what Rydin said. I use 5760x1080 for the landscape, yes FFXIV doesn't support it, but I think it will in the future. Where has the portrait way, you look like you just have one big monitor with spaces in the middle.

5760x1080 in a game like Final Fantasy. I'd rather see more of the peripheral vision landscape than more sky and ground
As long as the game supports 5760x1080 you shouldn't have any texture issues.
going portrait, you might as well have one screen
The only problem is, FFXIV doesn't support it yet. Though I have high hopes.
