I know we can either use all or shut off all custom music playing while mounts are flying. Is there ANY flexibility there... like choosing our own, or choosing another built in one for each mount?

Unfortunately, there isn't, and comments made by the development team (particularly main composer and sound director Masayoshi Soken) have made it clear it's not possible to change (the way sound and music are coded in the game means there is only a limited amount of tracks that can be cued up at any one time, and mount themes specifically have to be individually coded if they're not just using the 'default' mount music, hence why it's very rare for existing mounts to have their music changed).
Sadly, this also means they are unable to implement something like a portable orchestrion to allow you to play custom music out in the field (because the Orchestrion uses the secondary sound channel that battle music requires when outside - hence why it's locked inside a house or innroom, where battle music is not required).
Summon a mount that you want to hear mount-specific music for:
Summon a mount that you do not want mount music for:Code:/mount (Mount Name) /mountbgm on
Quickly toggle mount-specific music:Code:/mount (Mount Name) /mountbgm off
That's the best you can do with what we have.Code:/mountbgm
Yeah, I found the toggle, although I'd love to have Kirin's classic bit of music on all mounts!
Isn't there a bit of code to use the same icon as the mount uses when you drag it from the mount menu?
