Level main to cap, use for story completion and tome farming (unless I feel like a different run or need a quick queue) , then pick one class and level that to cap , swapping to the next as they do. I don't have a particular order or reason to level one class over the other BESIDES the fact I usually level healers last because that playstyle doesn't interest me. So far leveling has always gone "DRG (now Reaper), DRK, MCH, SMN, and then absolutely random. Minor motivation was to have a tank and healer earlier in my process so that I can fill out friends parties and outings.
Sorry I can't really speak to lower than 70 jobs. I haven't had those for a long time (unless you count BLU)

This game goes against its core gameplay concept and imposes ridiculous strict limitations on gearing for endgame so naturally I would stick with one role (tank) or depending on patch length two (tank and healer) for the weekly caps.
For everything else I would change jobs often. It IS the main "gimmick" of the game after all. If I can be all jobs in one character and swap on the fly with the press of a button, I'm damn well going to alternate and max all jobs.
There isn't any big re-learning process between jobs. That's about as much of a myth as tanxiety.
When i first got introduced to 14 by a close friend of mine from Tera, i started out as dragoon cus a big fan of dragoons and Kain Highwind then after that i lost count lol i played bard, monk and samurai all lv80 for a while during SHB then when reaper came, i mained it for endwalker storyline to 90 for awhile, retired it, back to maining Dragoon again to lv90. Lost my maining streak since late december 2020 xD maining drg again in 6.1+ xD reaper is fun but i prefer my dragoon.
Not very often. I usually play just my main (WHM). I will do dungeon roulettes on tank if it's adventurer in need typically though. I won't play my DPS too much until I get an adequate weapon, but even then I really only play one: my RDM.
About two or three alts is usually my limit in most games. I put the vast amount of time into my main. I mean, I will have others that I dabble in, but I only ever actively play about three. Been that way for pretty much all the mmos I have played. In SWTOR I really just played my sage main, sith warrior, and sorcerer. I had many other characters, but those were the only ones I actually put time into. In ESO I pretty much just played my main (sorcerer) - I don't play alts in that, and same with GW2. I only played my main (Necromancer) for the most part.

I have two characters. One sticks exclusively to caster jobs (all the healers and magical DPS), while the other takes care of the rest of the melee/ranged DPS (a tiny bit of tanking low-level content when I feel brave, and I picked up Sage again for when I just want a fast queue on something).
Each character is actually leveling a few jobs as evenly as possible while progressing through MSQ since the XP you get from that is insane. Sure, it takes some extra housekeeping and time, but I feel like doing it this way is a lot easier in the long run than only playing one job to the end and then going back and grinding others individually. Plus I'm in no hurry to reach "current" endgame content, so that helps.
So, yeah, as you can imagine I swap jobs ALL THE TIME while playing. Sometimes it gets a bit disorienting and my brain / muscle memory just doesn't want to make the switch to something new, but it doesn't last long.
currently plateauing from building DoL&DoH so they're just used for catfish and qiqirn beast quests and dwarves, gotta get me that sweet sweet tank.
using DNC to queue Dun Scaith for tomes and getting him to 79 so I can continue MSQ.
getting WAR to 70(59) by fates while waiting for queue to pop so I can do tank role quest.
so....... a lot.
I don't have any alts because I refuse to do the storyline again, it's good but once is enough in my life time

For raiding I have never changed my mained role. I may swap around jobs within a role: i.e I mained SCH primarily to raid, but occasionally I will flex to other healers when I feel like to or when my static co-healer wants to try something else.
For general contents? I still tend to be a healer but the line gets blurry here: I will swap to different jobs to not let my gameplay gets too stale as I clear the roulette list.
Basically so long as I can play something at decent degree and/or would like to show off glamour that is locked to that certain jobs, I wouldn’t mind playing it in general content. But high end? I reserve it to the role I’m most familiar with.
