Congratulations. As a veteran player of seven years, I don't have that luxury as I have long since finished all the relics I want (and several others) because of the very frequent dearth of content this game has for long time players.

You can't really compare your content grind as a new player (judging by your join date) and someone who has played for years. Naturally, you'll have significantly more to do.

Do you know why people "grind the heck of out it?" Because they're often bored, having waited months for something to actually do. Look at 6.1. Assuming you have no interest in Ultimate, none of that content will remotely last four months. It'll barely last two weeks unless PvP actually has a resurgence after their fourth attempt at an overhaul. Don't get me wrong, I hope this is the fix that finally sticks. I'd love to have fun, meaningful PvP but based on their track record, I'm not exactly getting my hopes up. Beyond that, you have farming Endsinger 50 times. That's it in terms of lasting content. Why they take so long to release the relic always baffles me. It's the one piece of longevity tailored content FF has but they wait almost an entire year to get it going.

Not to mention when it comes to grind oriented content, you typically want to get it done fast as you'll have a far larger pool of players doing it. Case in point, the whole "Memory of the Dying" step with the ShB relic. FATEs were getting mowed down by the minute in the first several weeks. Afterwards? You'd only spot a handful of people at best bothering.
