They can't. If you read the post, you'd know that they still have the jobs and all their job quests are completed. They don't have the job crystal so they can't actually change into the jobs in the first place because you have to equip the job crystal.
This really seems like the kind of issue the GMs should be on speed dial for and not have to go through an exhaustive investigation/approval process like with an account rollback.
I can't imagine just poofing the missing job stones back into your inventory would be very difficult.

They have removed these numbers from all their websites though. You will likely need a ticket number, what I would suggest is open a new ticket and reference the closed restore ticket. Describe that you were rolled back, but that has meant your RPR and BLU jobstones were not restored.

You should search for those Job Stones in your Inventory, in your Retainers, Saddle Bag and your Mails. It is not possible to drop, discard, sell those Stones. Try to equip a Reaper Weapon or a Blue Mage Weapon and see if it helps. I had now and then my Job Stones too hidden in my Inventory, don't know why, it just happens now and then. Check your Blue Mage Book, are all Spells still there, is your Gear still in your Armory / Inventory? Then your Stones should be somewhere and go to the NPC's where you took the Job Quests and see if they have a Quest.

When the Inventory rollback happened, it rolled back to the beginning of January.
I am a newer player (less than a year), and had just started working on the jobs for Blue Mage and Reaper.
The Rollback pushed my inventory back to before I did the job quests. All armor, weapons, and glamours did not exist anymore (Yes, searched through each inventory location to no avail).
My Job levels, my quests, and Mage spells remained intact.

I even had to rebuy a lot of other armor, and Materia as those also were now 2-3 weeks back.

The cost of rebuying all of my gear was WELL OVER the 2 million Gil that I was rolled back to. This rollback cost me so much in gear progression, but there is nothing I can do about that.

I just need my Job Crystals restored so I can continue with those 2 jobs.
While I hope you aren't up a creek without a paddle with this and you're able to get the items restored I have to ask - the inventory rollback, that was a process you initiated, correct?
I was under the assumption that you are instructed to not play the character while waiting for a rollback investigation as anything obtained from the start of the investigation to the closing of it would be lost forever? I hope you can get it fixed, but if the rollback counts as your one-time item restoration, you might be out of luck (which would be awful in this case and seems like some thing they should make an exception for).
