I wouldn't mind undercutting if there was a minimum amount you could undercut by. If I want to sell something for 20k and someone else is willing to take 15k for it, that's fine. But 19,999? Come on now.

Strangely some people appear to not be content with that and would prefer for someone to come along later and place the item up for one gil more so they can purchase that instead and claim the other as undercutting by a gil.

Something could be selling consistently for 1,000 over a period of time and seller A may decide to put the item up for 900. Seller B and C come along and set it for 850, so seller A changes the price to 849. A sharp buyer chooses to purchase 850s at varying intervals. Seller A sees this then sets his price to 800 instead, believing one gil under isn't supported by the community (even though it's just one guy), and then that smart shopper purchases those. Or some of those--depends on his aim.
And from this point seller A now has a mentality to drop the price a decent amount, so future prices will be cheaper. Score one for the buyers.
I find that trick cool in a way, but I'd despise the spreading of lies to pull it off. One, I hate lies, and two, I'd rather see it skillfully done.

Under cutting by 1 gill I understand. I can even understand undercutting by 1% .

... when people undercut me by 1 gil i end up lowering the price by 20%, funny.
edit: I.E: mythril wristlets i'm constantly getting undercut by 1 no matter the price i set 20k i get undercut by 1, i lower to 15k? they lower it to 14.9k and i only see 5-10 ppl who actually sell this. but it is like this for all the most liked SB equip., but still, very annoying.

It is dumb, but just buy their shit and resell.
maybe you have time to constantly reprice stuff on your retainers, i dont. its not about the money, its about the hassle of this UI. i'm still rich, beeotch. ;-)
Yeah people do it purely to fuck with you. For example if you're the only one selling something, someone will pop up and undercut you by 5-8k or more at times even though you can make quite the profit.
Last sold was 120k a few months ago and haven't been seen since in any market, so you start making it and sell it for 80k due to lower price on mats etc, someone pops up and decide "hey, I want to sell this too now!" and sell it for 20k.
I mean really?
