I've always just matched the lowest price. If everytime I come back from a dungeon etc and its the same retainer undercutting me by 1, I'll just destroy the market. I brought the Chondrite tools from 300k down to 20k on my server by listing 10 of each at 20k. I was pretty proud that someone managed to find out who I was and messaged me angrily.
