Because there are a number of moves you cannot stun that you can interrupt with Interject, across multiple expansions worth of dungeons, alliance raids, normal raids, and savage raids. In the case of some, it can result in an instant death, while for others, it prevents things from getting harder on the tanks and healers. And in some, it just prevents raidwide nuisances like the raidwide paralyze and damage in Puppet's Bunker from the large group of adds before the second boss, or the freeze from those chimera at the beginning of World of Darkness.
