The most recent Gold Saucer mount was actually added ~6 months ago, not "over two years". (Magicked Card)
Not really that unreasonable for SE to be focused more on the brand new expansion's launch than target big updates to niche content right off the bat.
If we're talking just "need more things to spend MGP on", I'd much rather them add untradeable consumables (ex. Cordials) to the prize lists than more 1-time-buys like cosmetics/furnishings anyway. (Though I'm still dreaming of my 9999999MGP "It's actually just Godbert carrying you around himself"-mount. Do it SE!!)

That's technically true but you know that's not what he meant.
Really though, while I am disappointed by the lack of new items I'm not terribly surprised by it. Those of us who are MGP caped are in the VAST minority. Most people haven't bought out the whole store and for them the current selections are just fine.
The Magicked Card doesn't really count. That's an achievement card, OP is talking about MGP mounts.
And indeed for those it's been forever and no new ones seem in sight. I remember theories for both Cerberus and CC going there, but they ended up being DR savage and cash shop.
All the latest additions cost a pita of MGP and are mostly useless, so it does feel indeed like there's absolutely no point anymore in earning MGP, since there's nothing to spend it on/aim for.
Word. Every time I see "New prizes have been added to the Gold Saucer" in the patch notes I get so excited! Then I race there, sort by only new items, nothing in Prizes I, go to Prizes II and it's like "Lalafell fart in a jar: 100,000 MGP" and nothing else, and my spirit crashes back down to earth.

Anybody that regularly does GS stuff is going to have more MGP than it's possible to spend.
I don't think they intend to release another super high priced 2m+ MGP mount anytime soon, so something to repeatedly buy seems like the solution.
(And even for players that have the MGP, might not buy the mounts just because they already have better mounts)

I'm not big on the boxes myself, but how does this lessen other completionist things? There's plenty of other things I'm the game that are show-offable. Things get easier to get over time, that's the way of mmos.I do have to say though that my drive to play the game has lessened recently as my original drive was being a completionist and taking pride in my collection where I had rare things that you have to get to Floor 150 of POTD for, for example. The Pegasus mount is what I'm speaking of. Now, you can just hope you get it in a lockbox.
