I thought the ancients at the ancient city were memories created by Emet. Why are they still a part of the MSQ after his death? Did I miss something? Miss-interpret something? What was your interpretation?

also you may want to put a spoiler notification on your title since this likely involves some pretty significant parts of the new MSQ.

The enchantment simply lasts beyond the death of the enchanter. It's said in the closing narration that it will fade in time, but of course the game doesn't really portray the flow of time like that so the city will remain in place for the foreseeable future.
That's a spoiler beyond the spoiler they're talking about.
IIRC the game explains that not-Amaurot will slowly fade away over time but it'll take a while for that to happen (which is game dev code for "we can't just remove half the zone when the story ends so we need a reason for it to stay around".)
For the same reason there's still air in the Tempest, despite Bismarck breathing that air bubble years ago - if there weren't, the zone would be gone.

It's because SE to lazy/don't have the talent/just don't care to change maps after clear in sorry change take place there. Like we can freely teleport to the past or to the most far out therrcparts of the universe.
Think of it like a primal summoning. A primal's summoner doesn't need to stay alive for the primal to survive. Emet-Selch is an incredibly powerful mage so his creations can continue to exist after his death.
It's made of the same thing that primals are and the MSQ clarifies at the end that it will fade away in time, but it's implied that time is more than an average life span.
It's not lazy. This is a video game and concessions have to be made for the sake of gameplay. Elpis has aetherytes because it would be super obnoxious to make the players go through the Ocular every single time.
Well, you don't have to, do you? If you want, just travel to Crystarium, go to the Occular, then use the portal to Elpis. Or teleport to Labythros, go to the ship, and then to Thule. What's stopping you? Fancy doing that 5-10 times a day?
Option is always nice, and you can make your own choice. Safe to say, most other players will not make the trip with you.
Can you imagine the hunt train need to jump through the hubs I described above?
