I’m basing this off of my experience in my extreme parties rn. Have seen a handful of Monks and no Ninjas. But SMN and Red Mages are fairly abundant.

White Mage has always been the most popular. Even since the start of the game. Kind of amazing.
Basing myself on Pandemonium data
Among the DPS:
The top
Reaper is a new shiny job, therefore obligatory popular.
SMN got new shiny things, popular.
RDM has always been popular.
The middle
BRD got new things and was always a popular job but now with QoL. It seems every uneven expansions, BRD is the top dog of the ranged role.
It looks like Samurai is holding well.
Dancer suffered a bit and is now in the shadow of the BRD.
Black mage is doing well considering it's a "niche job".
Dragoon is probably in the shadow of RPR.
The bottom
MCH remains high but probably lost popularity from many of its playerbase going back to BRD.
MNK didn't quite hit the mark.
NIN is by far the most impopular job, expect a lot of QoLs.
Among the healers:
WHM seems damn popular, maybe because of its simplicity.
SGE is second, probably because it's new.
SCH is right behind SGE, the changes definitely went the right way.
AST being lasts, I'm unable to answer why. There seems to be 2 WHM for 1 AST.
Among the tanks:
PLD and WAR are very close to each others.
GNB is third.
DRK is quite far behind.
Blue mage isn't very popular, but it's the most important.
White Mage and Red Mage for me. Getting those to 90 first then Gunbreaker then will work on other roles including Reaper and Sage.
AST is ridiculously good, but it's also busy, button bloated and many of the new card related buttons barely do anything. WHM by comparison is fairly bad at healing with an inferior toolkit, but straightforward to play. Despite all the flaws and inferiority, it's just more fun than AST. Sage too has no gimmicks or pets to manage which contributes to its popularity.
It's a good example of how gameplay is important for players and even in high end content many don't just pick the strongest for dps. For example DRK has the best tank dps but the bad toolkit makes it unpopular and SMN has fairly low dps but the accessible gameplay makes it a popular pick.
Objectively right now, using statistics for endgame content from the past 2 weeks, 1. Reaper 2. Summoner 3. Red Mage 4. Samurai 5. Black Mage
Mages are making a very strong showing.
For healers, White Mage has taken the crown position back from Sage. Well, it was interesting to see Sage take that away from White Mage even temporarily, as both Scholar and Astrologian couldn't manage that when they were new.
For tanks, Warrior and Paladin are almost equally popular with - perhaps a surprise - Paladin establishing a veeeery slight lead over Warrior.
Please note this is popularity only and does not reflect the strength of the various jobs. Though they can sometimes correlate, there's pretty much always gaps between the popularity and performance.
