Title, just wondering if we'll need to meld a new set or if the current set will likely still be the max when they drop the new gear for crafters/gatherers so I don't waste the gil getting pentamelds

If it's anything like Shadowbringers, crafted gear will be the same iLvl as the gear obtained from Pandaemonium (Normal), which is 10 iLvls above the gear from uncapped tomestones. Back then, the crafted gear was added with the release of Savage/weekly capped tomestones.
Save your good melds for now.
Crafted gear will be better and Pandaemonium normal gear will be better.
Then pandaemonium savage and the new tomestone gear, when augmented, will be even better still.
Once the savage and high end tomestone gear is out, that will be the best for a while.
I think I worded my post poorly, I was referring to the DoH and DoL jobs because pentamelding them is expensiveSave your good melds for now.

In that case, it depends on if you want to meld your DoH/L gear right now, or if you're okay with waiting on patch 6.05 (first week of January) to see which stats will be required to craft the new DoW/M gear.
If they keep the same pattern for DoH/L gear, compared to previous expansions, the next set will be added in patch 6.1.
The gear we now have available is what we'll have to use to make the DoW/DoM sets to be added in 6.05. We won't see new DoH/DoL gear until 6.1.
I would not pentameld the DoH set yet because we don't know what the recipe requirements will be. If you're like me and have a bunch of VIIIs leftover from Shadowbringers, you can always toss those on for temporary melds until we see the numbers.
You can pentameld the gathering set because we've got the main numbers to shoot for (3295 Gathering for +yield bonus / 3401 Perception for +Boon bonus) though you might want to hold off for theorycrafter recommendations if you min/max.
