Well, in terms of an EB-sized red chocobo, the "Amber Draught Chocobo" is exactly that. Not sure why they call it amber but I suppose it's not unusual for colors to get a bit funky with translations. (And personally, it's one of my favorites even when I'm not ferrying people around).
It does have a saddle and doesn't have a meteor ability, though, so I suppose there's that.

I'm up for it if we get it a char kick. Live up to the red comet nickname.

Then we need a red amaro.
"This is no chocobo, boy! No chocobo!"

There actually are red amaros, they're called chiliad camas and found in the north-west of Lakeland, and yes, they're highly aggressive, although not really too dangerous.
Whether they could be saddled for a mount though is another question entirelly...

Anything can be ridden. Once.
Actually, there are options already.
1: Company Chocobo - Use the housing Stables, feed them the right combo for red feathers. My 2nd Main has a Rolanberry Red Chocobo. (Absolutely Stunning BTW.)

2: Amber Draught Chocobo - Is mostly Red (Not yellow or orange as the name implies)
My third main has this mount, it's extra cool as it's a two seater.

Those are both charming in their own right. However, to reiterate not what I meant with all due respect. As I'm sure you're aware. It's not so much the color, but the idear of a call back mount for "The" Red Chocobo, The Red Comet. With aesthetically no saddle or bardings of any sort and the ability to do a meteor emote.Actually, there are options already.

Further suggestion as forementioned before being either through deathless combat with the Red Comet itself OR by mogstation. To denote it's difference outside the freedom of saddles be an enlarged size... Perhaps not a two-seater but of the same scale.
A mount of such scale I believe be easy to implement not really requiring much effort. Simple and clean, as well as a nice nod to those players for this notorious encounter in the Bozjan Southern Front.
