DNC and RDM are as simple as they get. I recommend trying Samurai which has a fairly simple and accessible rotation for beginners. Dragoon requires positionals but I'd put it right next to SAM in terms of difficulty.

Whitemage. You have to spam one button and put a dot on the target. It is very simple.

The positionals do practically nothing. Even if you don't hit them the entire fight, it's maybe a 5% loss at worst. It's also slow and doesn't have timers unlike Dragoon/Ninja.
