well there is going to be quests in 6.1 that require you to do all the role quests so if you want to do those quests you'll have to level a magical dps.

If you're leveling scholar, you get summoner for free anyway. No reason not to do both role quests while you're at it.

Gosh I’m really struggling to decide with these!

Tank: I planned on starting with PLD but dang I have been enjoying levelling my GNB, might try to get that to 80 before Dec 3rd and then take that through endwalker first.
Melee: Ninja
Ranged: Dancer is my only 80, but I don’t enjoy playing it! I have MCH at 70 so might go with that.
Caster: Summoner
Healer: Scholar
