I wonder if G'raha will still be an all-rounder or if he will just be a mage at this point?

I don't see any reason to reduce his skill set at this point, especially while Thancred is our only other tank.

On the other hand, it would be nice if they could give him access to archer again, but I think having two DPS jobs would confuse the way the trust system works with him automatically taking whatever role is needed in the party.

Yeah, I'd love it he could get access to archer/bard again, too. They could maybe introduce another version of him to the Trust interface that is an archer? And make picking one mutually exclude the other.
