    In Windows Search, type "Ransomware protection" and click the result.
    Turn off "Controlled folder access"
    or if you wish to still allow this security feature, then with the switch turned on, click "Allow an app through Controlled folder access"
    Click "Add an allowed app" then navigate to your FF14 install location "boot" folder and select the "ffivlauncher64" file.
    Repeat the process for:
    ffxivboot
    ffxivboot64
    ffxivconfig
    ffxivconfig64
    ffxivlauncher
    ffxivupdater
    ffxivupdater64

    Then you should never have the UI Settings Save issue and other related "stuff getting saved by the game" issues again.
    NOTE: This also generally fixes the Screen Shots Wont Save issue others have reported.
