This is exactly how I interpret it.
The identities and personalities of everyone involved and the events that transpire are canon. Exaggerated facial expressions, body contortions, unbelievably survivable flights/falls/impacts, credits, curtain calls, and other comedic shenanigans are comedic shenanigans added to the story by whoever has chronicled our adventures, to entertain posterity.
The Hildibrand quest lines aren't about the WoL, we just happen to be there. So they have a different narrator. I suspect it is Nashu.

Yeah, aside people mentioning 4.1 Goldbert with Nanamo , you have an ARR side quest in Bronze Lake that you rub Godbert's body with salamander oil and he gives a meteor ring, then during Hildy's ARR quest when you meet Goldbert again he will mention seeing WoL.
And the HW stuff with Gigi drawing in Idlyshire is permanently left there as well as the Inspector meeting in the Ishgard restoration quest.
It would be interesting if that Heroes Gauntlet appearance is mentioned in EW
There is a hypothesis, long before ShB came out, that Godbert and Julyan were modern incarnations of two of the Twelve, and that's why they are so absurdly overpowered.
Since our 24 man raid this expansion is finally going to answer a lot of remaining questions about the last of the Twelve, we'll find out if there's any truth to that hypothesis.
I don't think it's 'canon' it's just a gag a lot of Japanese media have, you see it a lot in anime where someone is much weaker than the protagonist can bonk them into a wall or something. If they'd fight Zenos in a serious setting they'd lose most likely.
