Because people needs goals(like mounts) to motivate them to try. They know nothing of the fight when they see the mount, but they still want it.

The fun comes as they are attempting it with no foreknowledge of whether they would enjoy it or not.

You are basing your logic in a hypothetical fantasy where players don't like a fight because they never got the motivation to try for the first time.

Whether you unsync them or run them synced with min-iLvl chosen, both are the proper way to do the fights. It's not improper to run through the fights unsynced.

The game should offer an increased reward for doing the harder of the options. But only because it's harder, not because it's the "proper" way to do the fight.

I think when people get hung up on words like "properly" they miss the point entirely.

Not having to do the mechanics of the fight and never having to contend with them means you don't do the fight. You just skip it.

I want players to be incentivized to not skip over the fight and do it the hard way where you actually have to learn things.

Such as you would when the fight is new. Phase skipping should be for pros.

What kind of rewards and reward structure did you have in mind?
I think any "older content but not trivialized" ideas live or die by their imagined reward structures.

You mentioned a mount, would that be a new mount? An alternate way of getting an existing mount?
Would you add one to every boss? Or just ones that would be best to not skip? (and how would "best" be decided?)

Or are you thinking more of a Faux Hollows style shop so not every piece of old content needs a new reward made?
If that's the case, and each piece of content doesn't have a unique reward, people will just grind whichever raid (or whatever) is easiest/shortest.

People already go back and do min iLVL for fun.
You're talking about introducing a system of rewards to encourage "not skipping."
Please elaborate on your ideas for the reward structure you'd use to incentivise people.
    I'm legit interested.

Wait, is the purpose of this system to incentives people to go back and do older content in a harder form? Or to prevent them from "skipping" fights?
I may be misreading you but it seems like you're somehow advocating for both?

There are many directions to take this idea, if i come up with a better reward structure i would just make a new thread.

Generally speaking i just want a version of the fight reward you for having to learn and do all the mechanics where only pro players at the fight can phase skip mechanics.

He doesn't want the reward for himself, he says maybe it would draw more people to it. Let's say he has 3 friends interested, but you can't do it unless you're 8 ; maybe the 4 missing would join the party if rewards were there.
He wants a carrot to exist to attract enough players to form parties, some of them would be there for the fight, some for the loot.

There is an issue with this however and Dewslam pointed it out : different goals, different approach. The 4 people that are just there for the loot will be way more impatient than the ones there for the fight, and start become toxic / leave if it takes too long to their taste. And I can assure you there are way too many people in this game, in my opinion, that don't give it 3 tries.

But if we're just discussing the idea : why not also grant the moogle tomestones on old raid with condition of no echo and min ilvl ? With a bonus for first timers ? Moogle tomestone farm events worked quite well to populate old content, otherwise it wouldn't have had 3 iterations, and the rewards are not crazy jealousy inducing, just a nice to have, that could be what OP is looking for.

Novel idea: they could hand out older moogle tomestones for older content!
