So i put this in search to see if there were any other threads on this and i couldnt find any so here goes. Is this a typo? is shatotto meant to be shantotto? or is it intended?

While I agree with your line of thinking and don't know why it wasn't just called the Gem of Shantotto, the sheer number of times they had to spell it "Shatotto" means it's nearly impossible for this to be a mistake (unless everyone involved didn't have any background in XI, I guess).

I was wondering about a bunch of other items too with strange names.

Such as Joukil's Guile, or Alesone's Songbow, or Gerbald's Redspike, etc.

Would be cool to get some lore on these people as well.

Not sure about the other weapons... But I'm pretty sure there was a guy named Sibold in the limsa main quest line, you had to fight him in the level 15 Quest.
