That would be cool to see, but I can understand why they don't from a workload perspective.
Every Ultimate would be 1 more raid to rebalance again for every expac and that would only lead to less Ultimate content lest it get too out of hand.

Unless you just mean updating them every once in awhile?
That would probably work a lot better.
