Same issue here with the latest M1 Mac Mini.

In my case, it seems to work without issues when the game audio is coming from the built-in speakers, but when I have both game audio and discord output coming from my Airpods, the game audio starts stuttering. Maybe it's a bluetooth issue?
Does not happen in other games for me.

EDIT: Also tested on Intel Macbook Pro, same issue. No issues with built-in speaker, but Airpods + joining a Discord voice channel + launching the game results in broken game audio.

It seems a natural issue for Bluetooth audio system.
(It usually works with hands-free audio system via bluetooth device)
should be separated Audio and Mic for clear audio sound.

Please check this way, Audio through Bluetooth ear-phone as like Airpods and Mic through wired Mic (External) or other mic device.
And also set in Discord separately.

It will make clear sound without any problem with mic.
