I'd like more Fordola, more Gaius, more Boulder Bros/back burner Scions, and definitely want some Emet-Selch in Echo visions. Ancients in general in Echo visions. Definitely want a segment of Endwalkies devoted to showing us some more details on that venerable past.
I'm also quite looking forward to new antagonists, whether major or minor. Gonna love that Magus Sisters ref I think. Really interested in learning about the Matanga.
Also quite curious to see how Ejika Tsunjika and the whole Isle of Val choice might be referenced. I doubt it will get a ton of screen time, and I don't have a lot of love for Ejika, but I'm invested in it since it's an offshoot of Sharlayan and what not.

Post-EW I'd like to see Gosetsu and "Yotsuyu" again.
No, I'm not asking for Yotsuyu to get revived. Resurrecting characters is cheap and undermines any arc or character development they might have had, and no matter what, due to all the horrible things she did, Yotsuyu was always gonna be beyond redemption in the eyes of the people of Doma.
What I would like is something along the lines of meeting up with Gosetsu again, finding out that during his travels he came across an abandoned Doman baby (or maybe work a story about a Doman family casting out a daughter that shamed them by getting pregnant from an affair and have Gosetsu come across the mother who dies in childbirth), he adopts the baby and upon seeing a glimmer of Yotsuyu in the baby's eyes decides to name her Tsuyu.
This would serve 3 purposes: 1) Gosetsu was at first dismissive of the Dotharls' believes but gradually warmed up and became intrigued by them, so this would be a nice cap to that mini arc, 2) Gosetsu as a Samurai in employment of the royal family tasked with protecting the people of Doma feels like he failed to protect Yotsuyu not once but twice, first from the harm her family and her Doman compatriots caused her (which eventually lead her to turn into a spiteful vengeful person), and second time when she died, so in saving the baby and naming her after Yotsuyu he is trying to atone for these failures, 3) Gosetsu couldn't understand why the kami would spare him and Yotsuyu only to have her die anyways, but can now conclude that saving this baby from a predicament similar to what started Yotsuyu down the revenge path was the reason why.

All the "background Scions". I miss Hoary Boulder and Coultenet, and like the recurring gag of how that one archer (or is she a bard?) is thirsty for Hoary and his brother. Idk, at the very least they could do like Alpha and have them appear at random around Eorzea to give the impression they're doing Scion things.
Also I'd like to see Ryne and Gaia just hanging out in the Crystarium or something
I need to see more of Lyse. I really hope we see her more outside of the stuffy diplomatic meetings. Give me drama, love triangle, something. Just get her away from that stuffy table and flesh her character out more.
Zenos. Yes I do like him!
And Lahabrea whose aether might still be kicking around in Zenos (who merged with the eyes, one of which absorbed Lahabrea). I understand the new raid series will deal with his story a bit which is nice. He's the Ascian we see the most of but he's the most underwritten in the story they told with him so far.
