I'd like a regular red chocobo mount

...no, not the recruit a friend version with the white plumage. Just a normal, every-day, red chocobo. They were common as heck in FFT, so I feel like that shouldn't be particularly lore-breaking as far as requests go.

Feed em dye fruits, there’s generators that give you an idea on how many you need.

It may take a couple days, but you’ll have it.

Dye their feathers with fruits like others have said. Unless you mean red plumage and red beak like the Doom Bird's in which case it's not currently possible to have a red chocobo.
