I don't think that you should worry about GCD, things speed up a lot.
NIN actually feels slower to me most of the time, during the burst phases it's fast but during the downtime when you're doing your 123 combo and ninki finisher which is what you'll be doing most of the time it's on the slower side.
Note tho that I am talking about how it feels, not the actual APM I haven't looked up that ( mudras add a lot to that ).
But I main MNK and I never feel like things are too slow on SAM, DRG, NIN, GNB or any of the casters which is mainly what I otherwise play.
DNC is a bit RNG but much like NIN it has bursty moments and then slower phases.
In the end of the day tho this game is very balanced, you can play whatever you want and it will be viable.
Just think about what you like the most thematically and go for that, things play very differently at max level.
That's why I've stuck with MNK since ARR.
While that is true, the meta GCD is very easy to and fast to reach and anything over that is not ideal.
In some cases it can even mess your timings up, on MNK for example you very easily end up with SKS bloat which misalings your burst phase and on NIN you want to avoid SKS.
It makes it harder to double-weave too which NIN does and your mudras are not affected by SKS which makes it a very weak stat for NIN.
SAM does have GCD breaking points where things align well you just adapt your filler phase to it, but others like NIN and MNK are more negatively affected by it than SAM.
On NIN a lot of your damage will just be totally unaffected by SKS which makes it pointless and on MNK as soon as you go over 1.96 your burst phase alignment begins to become messy ( not to mention that more crits = more chakras ).
Basically you just want to reach the bare-minimum on most things and then avoid it like the plague.
Obviously if you just want to play that way you can, but it probably shouldn't be recommended and on a lot of Jobs it'll just mess things up.
