I've barely touched PLD, as for the others... I'd probably rank them GNB>WAR>DRK, which sucks because Dark Knight was what I was gunning for from the start but... idk, I think it falters compared to the other two in terms of actually playing it.
Gunbreaker and Warrior feel better both in terms of animations and sound effects and also like they've got more going for them, whereas with Dark Knight you spend a lot of your time with just the basic 1-2-3...
i cant tell you what is best but i can tell you what not to play. that is paladin. paladin over-bloated. buttons completely hard to difficult to play on controller. you have massive rotation almost size of lvl80 summoner. has more ability filler situational abilities then all other tanks. that you just dont use or just stop using at some point, sometimes you feel like your not playing a tank at all. bout some abmonation that tank devs made
meaning some abiltiies you get really wont use unless your raiding
best just roll warrior

If you're brand new to tanking I would recommend warrior. The paladin rotation is very strict and unforgiving, dark gameplay doesn't get good until 72 and requires smart management if resource bars, gunbreaker mitigation is lacking and you need to understand how your 30 second/1 min rotation works to put out quality dmg. Warrior is pretty simple, less buttons, high damage and decent mitigation. You will also start at level 1 allowing you to ease your way into the role. I main DRK but I wouldn't recommend it to new tanks.
