Will the 80 tomestone gear "go poetic" at EW launch?

I've had now three considerable stints in FFXIV, and this third will likely be the first time that I'm subbed for the transition of an expansion, so I have a question that will impact and is impacting my plans:

Is everything currently being sold for tomestones in Eulmore likely to turn into a poetics expenditure at the launch of Endwalker, or does that come later?

Also related, when does "here's a whole chest of gear" potentially get plugged into 5.X patch content according to precedent?

Reason I ask is I paused my main job at the conclusion of 5.3 and am holding him there in hopes of either dumping poetics into him to clear 5.4-5.5 dungeon requirements (he was barely geared enough to enter the last 5.3 dungeon) or taking advantage of what I assume (based on my guess alone) will be some inserted catch-up gear to get past the usual endgame activity of grinding stones to raise one's item level. When I rode the road to 70 I think I only needed to stop once to get some stones, my ilvl was generally "kept relevant" to get into "prior endgame" story dungeons by being handed gear hand over fist from MSQ rewards... as is proper, IMO.

Most likely, yes. Poetics have been the default for old content for most of the game's life span so far. They've given us little reason to think they'd change it now, but I guess we'll see.

Yes, everything being sold at Eulmore right now for tomestones will be sold for poetics in 4 months time. This is what they always do so I don't expect it to be any different this time.

If it's like previous expansions, you will be able to buy item level 515 gear from The Crystarium. You will get high-quality item level 515 gear from the Main Story Quest before the first dungeon of the expansion.

Yes, if the pattern holds. And they recently started offering the augmented versions for just poetics to help people catch up easier, so you won't need to get the base item and the upgrade pieces.
