I've been one job for 3 1/2 years. I'm good. You'll be good to.
I rather have someone that has mastered one jobs rather than someone that is mediocre or average at every job.
If you want to play only one job, that's fine. You will miss out on some content as a result if you do (the questlines associated with other jobs and the role quests associated with other roles in ShB) but if you're okay with that, then that's okay.
If you only "main" one job, that's mostly what folks do in my anecdotal experience. I personally do that, have all jobs at 80 and decently geared but my "main" is Dancer. It's what I play going into content for the first time, doing the Main Scenario or general farming.
The downside to playing one job and only one job (even more so than party diversity with your friend groups) is the lack of experience in other roles and, more specifically, jobs. Personally experiencing a job and how it plays gives you a better understanding of their tools and how they flow when you're paired with other players playing that job. That experience and increased understanding can clue you in on what the other players are doing (or aren't doing) and better coordinate your efforts with theirs.
There is some story content you'll miss if you only do one. In Shadowbringers you have to do all four role quests to unlock a bit of lore/story, but it isn't much.
Gameplay wise, there's no penalty to playing just one job. There used to be requirements to level other classes to an extent to get certain cross class skills, or to unlock your class > job upgrade quest, but these are thankfully a thing of the past. You can play the whole game with just one class/job and be just fine.
