They work hard, yes. But if the work is not satisfactory, they are being paid (By the players, mind you) to fix the mistakes.
There also a reason programing a multi-featured multi-user application is more difficult then "Would you like fries with that?"

In one you have countless lines of code in which one can conflict with another in unknown ways.

In the other you just need to keep your hands out of boiling oil.

In one case you take your order back and make you another. The other takes a bit longer. In both your waiting longer then you expected.
