I have some but I know I am missing quite a few of the rarer ones. It does seem to be RNG would love to be able to buy with coins.

There are 3 in each zone that are very rare but are 100% dropped with duels. I'm okay with that. Makes the bike a bit more work to get, you either gotta grind til you get lucky or do harder content to complete the duels.

This one I found most useful. I use that site to track everything that I can track on it. And since the minions/mounts are all auto-tracked, it makes it easier. Plus, you can filter out the ones you already own so you aren't looking at a flood of everything. And the Orchestrion roll tracking is great.

Would be okay, if not for the fact the duels pop rarely in a given period, and can get stuck behind other CEs spawning (especially that damn math robot). The system they put in gureentees a spot in the duel eventually, but it can still be frustrating to even get an opportunity to.

Meryall is my last one. I've spawned and completed her skirmish chain several times now and not gotten it. Meanwhile many of my friends got her while leveling through the zone and not actively farming for it.

On the flip side I have been fortunate enough to get all the CLL and Dalriada notes within 15 runs of each. One of my unlucky friends is up to 35 runs of the Dalriada and has still not gotten Menenius page 2.

RNG can be cruel. I can see SE adding a coin exchange option sometime in the future but for now I feel like they're going to leave it to keep people grinding until Endwalker.

As an aside I farmed the Southern Front ones back when the content came out just because I like lore and collecting things. With the mount boosting the general populations interest in collecting them it's funny seeing the world at large know the pain of farming for Dyunbu.
