Ping does have an impact on performance- it's not *just* the server system, though it does exacerbate the issue.

Exactly, if it's a well optimized system ping won't have an effect on performance versus a horribly optimized system. It's generally only shooters where you want to make sure ping is at a good level, MMOs have breathing room by design to deal with more varying ranges of pings.
