Seconding this. I can't help but want to dye the gear as I look at it!
Likely EW will have a set using those models that will be dyeable. Most (but not all) dyable gear are reusing models of already existing undyable gear.

Actually there's a definite pattern to the endgame dungeons and it already pointed to this patch's gear not being dyeable.
5.1 Grand Cosmos - new design, not dyeable
5.2 Anamnesis - repeat design, dyeable
5.3 Shadowless - new design, not dyeable
5.4 Heirloom - repeat design, dyeable
5.5 Paglth'an - new design, not dyeable
All that said, it is inverted from the Stormblood patch dungeons where the new designs (Skallic, Bonewicca, Alliance) were dyeable and the repeated ones (Farlander and Royal Volunteer) were not.
Though on the other hand again, we got three dyeable sets of alliance raid gear, which are usually undyeable.
Gear visual assets eventually get reused, so this is simply a matter of waiting. They'll more than likely be added as a crafted set eventually.

The thing is, they always follow a pattern of releasing them undyable just in the future re-release them as leveling gear being dyeable. That's probably the reason...
I don't know how much this affected things if at all. But the Skallic and Bonewicca sets were also the fan design contest winners for healer and caster gear respectively. (Tank was the Lost Allagan tomestone set in 4.0, melee the Late Allagan pvp gear, and ranged physical the Neo Ishgardian crafted set.)
Meh, just wait.
They will 100% reuse the outfit for a "crafted" set in Endwalker.
