In addition, while Corsair has great build quality, Corsair's PC software (iCUE) is literally the worst device support software I have ever used. This is not an exaggeration; it is so bad that I half-jokingly think that inflicting it on customers should almost qualify as some sort of minor cyber-crime.
However, many MMO mice require the software drivers that run on the PC in order to work, which is why quitting the software on PC will cause the side buttons to stop working on many mice. For instance, connecting the Naga Trinity to a Playstation (at least last time I checked) didn't work, as there was no driver to handle the side buttons, and no onboard memory to allow the mouse to store mappings for those buttons. The Scimitar Pro does have onboard memory; if you program one of the hardware profiles via iCUE on PC and then plug it in on PS5 it should in theory work, though I won't swear to it as I haven't actually tried myself.
(I could attempt it after work today, though; I mostly play on PC, but I have a PS5, a Playstation license for FFXIV, and a Corsair Scimitar Pro...)
Sadly, the only one I know is guaranteed to work is the G600, which you rule out above.
