Certainly the Ananta and the Lamia enemies from Sastasha and Allagan areas are the same, but the skeleton also seems to be used for those ghostly "tower of masks" and the fire analas at Hells' Lid as well.

I think Shinryu was an enlarged reskin of the Nidhogg/Hraesvelgr dragon body with an extremely long tail.
Nael's skeleton was reused for Kuribu/Forgiven Dissonance and Nidhogg's dragoon form. There is a lot an idle stand chance can do to make skeleton sharing harder to notice. Forgiven Rebellion is easier to notice reskin as it uses Nael's idle stance.Nael Deus Darnus, sort of. They've reused her and even reused the exact model for her Turn 9 appearance, but I guess technically as far as I can see there's nothing that's reused the skeleton? Probably a shot and a miss.
Most of them are actually reskins of previous bosses.I don't think they've reused any of the Ivalice raid alliance bosses as hunt monsters yet, with the exception of Construct 8, but I haven't participated in S rank hunting since Stormblood.
As those are actually just enlarged Player Character models no real need to.Obviously they've never reused any of the Heavensward knight forms... I think.

He is a Roe model with extra gear. Even uses the WAR's axe stance.
That was a reskin of Sephirot's giant model and later reused for a pseudo-boss in Mt. Gulg.Bardam's Golem, though it's technically not engaged.

I don't think so. The Hakkinryu's and the Ganryus are reskinned Twintanias, but Shinryu itself is just too large to be a redo of Eggnog and Hraesvelgr. The legs hold his body way higher off the ground, and not just due to his size, and his head/neck don't arch back and up like an S. Then in the first phase when he's floating by the platform, that's entirely unique as far as I can tell. I just don't see it being a bigger Eggnog at all.
As for the Ivalice raid bosses, ok, which ones are reuses of what prior bosses? I could see Yiazmat being a reuse of Vishap.
You're saying that Sephirot's giant frame was used for the earth elemental in Swallow's Compass, Seiryu, and Mt. Gulg? I mean, they've got some similar mechs, but that one seems completely different. Like they'd have to turn so much invisible on the arms.
Seiryu I can sorta see the Zurvan reuse, but Suzaku, you're gonna have to point out the stitches.

Don't forget about the pseudo boss in the Swallow's compass too.
Also, (dunno if it's come up yet but) I'm pretty sure the Gulg boss (Forgiven Obscenity?) is a reskin of Shiva.
Reused and palette-swapped assets have been a Final Fantasy tradition ever since the very first game on the NES/Famicom.
Which is why they are a reskin of "giant" Sephirot: they use the same skeleton and animations with a different skin over the skeleton.
- Reskin: Uses the same skeleton and animations with a different appearance (i.e.skin).
- Stance change: Same skeleton and skin standing in different ways and holding different objects. (This is done with most of the various humanoid female bosses).
- Skeleton Swap: Uses the same skin over a different skeleton (some bosses use this for form shifts)
- Pallet Swap: Uses the same skin and skeleton with a different coloration and possibly glows.
