There might be no jobs around VII (mainly because Ninja, Machinist, Monk and Dragoon takes some spot), but VII doesn't get the short end of the stick. There is 2 whole areas coming from VII. And the Gold Saucer is quite a big one.
II, XIII and XV don't have much in comparison.

I understand you're quite the VII fanboy, but this FF got a lot of references, there is currently 4 Trials about VII summons/ennemis, soon 5.
FF II got nothing beyond talking beavers and in the future, the Pandemonium. How many bosses are from FF X? Yojimbo and I don't have anything else at the moment.
Also monk uses Final Heaven as their LB3, another FF7 reference.

Most of the games have some amount of reference in the game for sure. But 7 has been incorporated pretty heavily into the general gameplay we see every day... while other titles tend to just a dungeon or with the past two expansions, some references in the raids.

Also it's not much, but there is a II reference, since you listed it, in the password used by the Scions in ARR, but that's dropped almost as quickly as you're forced to use it "wild rose" which is so minor and easily forgotten, it just as much reinforces your claim that its been largely overlooked in comparison to the things we see in the game every day from other titles.
