By this train of logic a Doctor, Pharmacist and the Lab technician that works at a pharmaceutical company creating various drugs and medications are all exactly the same and we can clearly do away with two of them as any one of them could do the job of the all three.
It doesn't have to be called Chemist, that's simply the name with the most recognition, the desire people have is for a healer that employs potions and the like in combat over a forth flavour of mage that heals.
But even if they did go with that name, there's a clear distinction between the two, the game even went out of it's way to make that distinction during 5.3, Alchemist generally say in labs or off the front lines, producing potions that are then used, a Chemist or Apothecary would take them into battle and use them there, pretty much Alchemist is a Pharmacist, Chemist or whatever they'd call it is a Field Medic.

Yoshida: With the Astrologian there were actually many different ideas that were pitched to even name the job. One of the more unique ones was “item wielder” (Editor’s note: Foxclonn began digging in his phone to try and find an English equivalent for their original job concept name). In the end we considered the lore and the fact we’re going into Ishguard. [SNIP] Another unique element and ideas in terms of a healer there was actually an idea that was pitched: “Could we have a healer that wields firearms?” (Editor’s note: They found the word at this point to be Chemist and Yoshida makes a throwing motion to mimic healing by throwing potions)
So for your laughing at people potential disappointment because "Alchemist" exists kinda fall short when not even the devs see that as a restriction.
But they've also said they've had different ideas for heals, so no guarantee it'll be Chemist either, but who knows, after all, we could have gotten it instead of AST if they weren't thinking about Ishgard's lore.
I think it makes sense, going into Garlemauld, I figure if we were say, to get a new healing role and for there to a Garlean tie-in for one of the new jobs, Chemist would be a good fit IMO. My first thought goes to somebody like Aulus for a character who already fits that kind of theme or tie in.
Alchemy may be a pre-cursor to Chemistry, it is often considered to be two different things, because Alchemy doesn't follow the scientific process and is considered pseudo science. In a world where magic is a thing, of course it's different.
But in a universe where magic and science exist are are separate concepts, Alchemy and Chemistry would too be separate concepts. Which again is why "Chemist" IMO would make sense as a Garlean thing, because they are incapable of magic. But would have a few scientific means of providing healing.
The one perhaps most appropriate from the FF Universe would be Chemist. But they could offer a variation of it with references to the same sort of mechanics.
That's like saying trepanning and brain surgery are the same thing.

Alchemy is a pre-cursor to Chemistry, but ties to magic, philosophy and religion, not science.
Chemistry is scientific and works very differently to alchemy.
But that's entirely moot, because the devs were seriously considering giving us Chemist instead of Astrologian. Their set back? Astrologian tied better to Ishgardian lore.
And hey, WHM and BLM's set aside their differences to create RDM, so no, they're not so rigid on "you have this one thing, you can't have this other related thing that is not the same or because the words are very similar in English, hi we're a Japanese company."
When we have a nation of peoples who can't manipulate aether to create magic, they rely on science and technology. It is entirely plausible for chemistry and alchemy to be completely different concepts.
