Please pause the timer on the gardens when the server is unavailable, i grew the plants for a week and now they died because of that.

You can keep the plots in storage to suspend the timer.
I lost some umbrella figs this way too. Could maybe have saved them if I remembered to tend to them right after servers opened but oh well.
It's kinda sketchy to have things in the game which need to be done every 24 hours, and then have a 24 hour maintenance which doesn't pause that timer.
Anytime you have things growing and know you'll be unable to play for a day (or more), put the garden patches or flowerpots into storage. The growth timer is paused while they're in storage and resumes when you place them back in your yard or house/apt/FC room.

In my case I had last tended to the plants sometime on Sunday. I was planning to play on Monday too, but completely forgot that the downtime for major patches is 24 hours and was unable to log on. On Tuesday after servers opened I was too focused on gathering and crafting the new stuff. And in the evening when I finally remembered the plants they had died.
So yeah, I could have put the garden patches in storage on Sunday. But I wasn't planning to be away, rather the downtime prevented me from tending the plants. If I had remembered the downtime I could just as well have logged on on Monday morning before downtime to tend them then logged off in my yard so I would have remembered them on Tuesday too.
I understand. Things happen. My internet went out earlier this year and the COVID situation delayed how fast they could send a tech to my place to fix it. All my stuff died, of course. But it's just a game and seeds can be replaced even if the process can be annoying.
Not to nitpick, but your join date says july of last year. That would imply that this is at least your 4th major patch. Downtime is always 24 hours for major patches. In 3-4 months when 5.5 hits, that one will be 24 hours too(will also be from monday morning to tuesday morning).
unreliable information, i don't play for that long, my subscription runs since 210 days, which means around ~april or may. this year.
Still, having to put in your garden into the storage to prevent your plants from dieing when the server shuts down, is like having to remember to put a cork into your leaking water tap before you leave the house, instead of fixing the problem.
