I believe the awarded currency doesn't change, and current items won't be removed from the list of what you can purchase. The only thing that changes is the fight. That means you will be able to purchase the previous mount using currency awarded from the next unreal trial. The only constriction that is created there is now you will have to choose from multiple mounts, assuming another is added with the next unreal trial.
