I'd strongly suggest taking a defensive stance like Guardian or Breathtaker + potion kits for actually tanking rank V/star mobs.
The former adds around maybe another 20% passive mitigation while the latter adds evasion and reduces the chance of a potion kit fading to a measly 10%, meaning your HP will just keep getting automatically topped off whenever it dips below 50% barring extremely bad streaks of luck.
As others have pointed out, the likely source is that you accidentally took aggro on a mob that was rank 4 or a 5. Next to each monster's name is a roman numeral (I - II - III - IV - V) that denotes its power level (note: the ranks are just identifiers of power level; rank 5's can appear in the first area). The damage they do rises exponentially, to the point rank 5's can auto you for over half your health without mitigation, and tanking more than one 4 or 5 can result in being insta-gibbed without proper planning.
Rank 4's & Rank 5's can be accidentally pulled by people into skirmishes (People accidentally aggro one on the way, then when it follows them into the skirmish, random aoes cause it to start killing people as it runs around insta-kill autoing everyone who hit it), so its best to be vigilant while doing skirmishes and if you see mobs not part of the fate being pulled in, watch how you aoe/switch to single target to not accidentally aggro them. (mobs part of the skirmish can be identified by having a purple circle next to their name)
If you want to tank a rank 5, its almost mandatory you obtain one of the essence lost actions that makes you beefier (Guardian) or the one that gives you crazy amounts of lifesteal on all your attacks (Bloodsucker), as they do tremendous amounts of auto damage. It's also advisable to be in a full party as they have huge amounts of HP and your healer will be busy healing you almost every GCD, if not every other one, making you basically the only damage dealer if its just you + your wife.

Since no one mentioned this. You are also sycn to ilvl 430. Your gear outside of bozja doesn't matter unless it has the haste which is the only thing carried over. The 5s on a healer without defensive buffs autos for about 80% of your HP so yea. Mob ranks matter.
