I would honestly say dancer.
It has those burst-y phases to it where you might find yourself pressing a lot of buttons but other than that, it's a pretty easygoing job.
En avant is what makes it for me. Just really fun to dash about.

edit: here's the machinist basic combo (obviously there's situational skills and other attack buttons but you said you're fine with situational skills)

Because I want to be able to take in the fight, enjoy the view, etc. Constantly looking at my button bar for combo signals and such is like playing a dance simulator. Or playing an instrument.

I completely understand. I also get overwhelmed when my job is too complex and there's too much going on in an instance/raid.
If you look through the whole thread you'll see there is a consensus among players on which classes are the easiest to play. Good luck!
