the answer to the initial question would be blm. but it seems you don't want to play blm.
then maybe rdm. it is really simple unless it get's heavily adjusted with 6.0
NIN is hard only on the rotation because it's a very tight opener where you have to weave constantly in every GCD under a trick attack window. Learning NIN itself isn't difficult, but maximizing your DPS under the burst window is the tough part for most people until they develop the proper muscle memory for it. The other problem with NIN is that the moment you start your opener and burst window - you are inevitably stationary. TCJ will keep you locked down for the time it is cast and you don't want to leave the boss due to the number of weaves you have to do within the time frame or your damage drops considerably. That's also part of the beauty of using NIN though - people like the huge burst impact they give.To the first part....NIN and BRD is hard? I don't know about that. I find NIN fun as hell, and actually easy to learn DPS. Yet still complex. BRD is pew pew pew with procs.
RDM for me has literally the simplest rotation of all the DPS. RDM is RNG but good RNG if that even makes sense.
And I think everyone will laugh at this, but I find BLM hard to play. I just never sat well with me since my rotation will change every 10 levels after 50 drastically. BLM to me is very deep...and kind of confusing...*go ahead laugh it's fine*
RDM is the simplest for the time being and very straightforward. It's also very fun to play and has good mobility. The DPS is on the lower end however.
honestly no one can give you a clear answer, first we don't know your preference in terms of gameplay.... some will prefer melee (sam, mnk, nin, drg) other will prefer caster (blm, smn, rdm) and some will prefer ranged physical (mch, dnc and brd).... second we don't know if you want to play the jobs as casual, raider or hardcore... a casual will try to without concern about optimization, raider will try to take was is the most meta or hardcore will simply try to become the best at the jobs they decide to stick with even if it's not meta (and believe a true hardcore can make any jobs shine)
that said... for some people class like sam, mnk and nin are easy to play, it don't means it's the case for everyone....
honestly say you search for the most consistent dps and at same time say, i don't want to touch blm is like said.... let's ignore that blm is actually the small favorite of yoshida and since...always... it's the jobs that get stronger and stronger while becoming easier and easier to play .( that my opinion)
the best advice was given already, level up everything and see what you prefer.... we can't tell you what is the best for you.... only yourself can find it.
BLM, As long as Yoshi-P Lives and Breaths BLM will always be top DPS.
