Death Metal is not very popular much at all, but it requires significantly more talent and time to create and produce. The lyrics have significantly more depth, the notes are more intricate, there are more instruments the require more harmonious team work with the band, I could go on and on.

Death/black metal started as Lofi played by a guy (Varg) in jail by what little they could get their hands on and in many many ways hasn't been trying to grow too far from its foundations.
Technical death metal exists, but for the most part you're overgeneralizing and overselling the complexity for the sake of pushing your flawed metaphor.

Pop music is the most popular genre. It is the most simplistic of all genres.

"Pop music" is a meaningless genera. It's literally short for "popular music."
For example, in the 80's freaking Judas Priest was classified as Pop Music.
That genra is too nebulous to fit into your metaphor and it only serves to undermine your point.
