what can i do to keep interested in this game?

As others have said, maybe it's just time to take an extended break and/or try a different game. Clearly you still like the game enough to want to play it more but by if you essentially just forcing yourself to play more than it is entertaining you then you're just going to lose the love that you do still have.

No game, regardless of how meaty it's patches are, is going to be able to legitimately keep a players busy and entertained full time and it's unfair to expect FF14 to be different in that regard. But it is your time and money and you should be spending your time and money on what makes you happy. If FF14 is not that thing right now then that's just the way it is.

It's not in NG+ yet, but you could make an alt and replay the story.

I tried to take breaks but couldn't find anything that holds my attention like 14, so I just play through my burnout and if something catches my eye then I play it on the side as a 2nd game other then 14.

I got alot of downtime so I feel it up with ffxiv, been here 7 years so I'm either in love or tempered by the game like a primal does.

so,,,ive got almost all to 80, done all but 2 beast tribes, done a few savages at 80, got the 70 savage mounts, and i just dont know what to do anymore besides roulettes and afk all day.
ive basically just been unsubbing for 30 days at a time and coming back before house demos, but is this the only solution?

Get the rest to 80, finish the beast tribes, clear E8S, Ramoooooooh mount. That's just to complete what you're currently working on. If you're not doing that, then you're burned out.

Yo-kai grind
Crafting log completion
Gathering log completion
Fishing log completion
Sight seeing log completion
Hunt log completion
Side quest completion
Renovate your house (if you have one)
Craft (not buy) your crafting and gathering gear
Sky builder scrip grind
Obtain all DoH/DoL relics and prepare for their updates
Do an older relic quest
Help new players clear Shiva Unreal or other EX encounters
Primal mount/crafting material farming
Learn to play a song using perform on your own
Glamour chasing
Inventory/Armory clean up and management (this one is interesting because it can be easy to find an item you've been holding onto that will actually send you on a grind just to get rid of it, e.g. you're holding onto x75 Alexandrite.

Plenty more options other than what I listed here. In short, the activities you listed won't keep ANYONE interested in the game for a sustained period of time. If you're doing just that, you will get burned out real fast. Most players devour new content in only a couple of weeks. After that, they are back to their normal routine with additional content to queue into. If you're currently working on something or somethings right before new content is dropped, you will be putting yourself in a good position to maintain your interest in the game. If you're chomping at the bit waiting for something like the Bozja front, you're doing the exact opposite of that.

By doing other things. There's an unlimited amount of things you can do other then playing XIV 25 hours a day / 8 days per week.

You have to decide what you enjoy doing. No single game will keep someone completely occupied if they have more than a few hours a week to play..

It's good to have a few games you switch between. Even if I spend most of my game time here, I do play others on occasion for a change of pace.

I play other games or take a break when it gets to that point. I don't like making something I enjoy turn into work

If you're not interested in the LARGE amount of other content available to you: Relics, minion/mount collection, PVP grinds, Squadrons, achievement hunting, Eureka/diadem, Huntmarks, gardening, treasuremaps, wonderous tails, Faux, Gold saucer events, chocobo races, ShB shared fate capping, etc etc. Then maybe yeah.
