Is there any reason to use CNJ after getting WHM? I see no reason to, since WHM has all the cool stuff.
Also, Red Mage doesn't count as Healer class, right?

You don't use the basic classes, after getting their job crystals, anymore.
Red Mage is a dps role in this game.
Absolutely no reason to use Conjurer over White Mage. If you want a more detailed/historic reply, I suppose you could've used Conjurer back in A Realm Reborn for greater cross-class skill variety and double the amount of cross-class skill slots (and even back then, staying in a base class was... bold), but nowadays there is no benefit to staying Conjurer. Square Enix's concept of having Classes as generalist and Jobs as a sort of specialist branch fell flat on its face, so each expansion has just reduced the relevance of base Classes.
And no, Red Mages don't count as a proper healer. They could keep a tank up in a pinch while throwing out Verraises, but in serious content they have nowhere near the required healing potency to handle things. They're DPS, first and foremost.
Jobs are a direct upgrade to Classes.
Was there ever a time where CNJ was superior over WHM back in the old cross class system? At best it was until 35, when Regen hit.
Also, you need to be a CNJ to get the unicorn mount, but otherwise, keep the crystal on.
Think of the job (WHM) as being what the class (CNJ) grows into. You could also say CNJ is the basic job and WHM is the advanced job. You do want to move to WHM, as CNJ has lower stats and won't gain any new abilities, and so it will be harder and harder to keep up with content.
Red Mage is a DPS with good solo capability because of its heal and the ability to help a party recover if things go bad (perhaps an emergency heal on the tank if the healer is dead, and eventually the ability to raise the dead healer too). So, if you want to DPS first but be able to help out when things go wrong, Red Mage is a pretty good choice.
Once upon a time there were use cases for using a base class over a job but jobs are very much an upgrade, classes exist as a legacy thing from 1.0 and they are moving away from that system.
And only use case that comes to mind is in 2.0 a MRD could a good amount of damage in the right set up versus Warrior. But nothing like that is a achievable these days, always go for the upgraded job instead.
Lancers used to hold off on their Job stone for a while, because the stats + jump didn't make up for the cross class skills lost for a while. Marauder was the big one, though, yeah.

I do kinda wish you could stick with a class as an alternate skillset past 30. Sorta like, re-do the SCH/SMN split so SMN is just Arcanist and Scholar is the job, and give all the other classes similar splits. Part of me really liked the CNJ lore, and while we're luckier than a lot of other jobs in getting to keep strong ties to our old guild and still caring what "the elementals" as a group want, gone is the focus on different elementals, and living with the forest seems to have been replaced with just... defending against the corruption of voidspawn and darkness. We don't even have elemental magic anymore FFS.
