Welcome to Eorzea (and the FF series!)
It's always great to see a new player in FFXIV who is also new to the series as a whole, as FFXIV actually references all the 13 games that came before it (and the titles after too!) as well as the many spinoffs and tie-ins the series has too. If you're eager to get into the other games of the series and are not really worried about "starting from the beginning", then the first title I recommend to try would be, of course, FFVII - the original PS1 version, not the recent
Remake on the PS4 - at least, not
yet.
Why? Because the
Remake is not a replacement for the original but fits into it's story side by side, for reasons which are revealed in the Remake, so it would pay to become familar with the original game and the other titles of the FFVII Compilation like
Crisis Core and
Advent Children before playing episode 1 of the Remake. FFVII is the title that made the FF series what it is today and really put the FF series, and JRPGs in general, into the mainstream, so it's worth playing if only for that reason alone.
From there, move out into the rest of the series. Fortunately each FF game is set in it's own unique world and setting with only certain elements reoccuring between each title (chocobos, moogles, monsters, magic spells, items, gear, Job classes, crystals, a character named Cid etc etc), so each title is like stepping into a whole new story, because it is! The
FF Wiki is a good place to start getting aquainted with the ideas and concepts each FF title shares.
