In general you're better off getting individual pieces when you can. It's harder to replace a multi-slot piece because you need two new pieces of gear instead of just one. Stat wise there's not enough difference to matter, but single slot items are much more convenient.
That said, don't worry about it too much. They stopped making gear like that a long time ago and you won't see any past level 50 anyway.
In the levels where such gear is available, the difference will be negligible. As long as you're wearing something job-appropriate and reasonably appropriate item level, you're good.
You're in the early game, no need to stress much over min-maxing.
You will only see these at lower level so it does not really matter.
As you go up they get rarer and rarer until you won't see any later on.

The one thing to be careful with regarding tank gear is that the "recommended gear" system doesn't work well for tanks until you get to Lv50 because tanks can equip things intended for other classes and the recommendation is based on Vitality (a stat added to other gear as well) instead of Defence, which is what you really need.
If using the recommender, check the stats of the suggested items before agreeing to equip them and make sure you're gaining rather than losing Defence.
If you're carrying but not actually using gear that gets incorrectly recommended, you can move it out of the armoury chest into your main inventory to get it out of the way.
Once you get to Lv50 (or Lv60 for jewellery) they fixed this issue so tanks can only equip gear specifically meant for them.
Doesn't really matter. What does matter is the total stats you get, so compare what you get from the multi-slot item compared to the two separate items.
It doesn't matter that much, after level 50 multi-slotted gear is phased out nearly entirely (I wanna say the Vermillion robes are the only multislot item after ARR). As long as your gear is close to the level of the content you are doing, you should be fine.
This isn't so much a "tank" question, as mages have to deal with this as well. Basically, gear that covers multiple slots can be considered the same as having individual pieces of gear the same item level for all slots involved. Once you have individual pieces that are a higher item level, go and put those on instead. If some of the individual items are higher and some are lower, add up the main stat (Vit for tanks, int for casters, mnd for healers) and see if they're more than the main stat on the multi-slot piece.
I miss multi-slot gear.
