What? Hilda literally trains under the WOL, and Rostnsthal, how to be a MCH. By lore, player MCH is Ishgardian/Stephanivien's MCH, so I agree she's the best representative there is.I'm going to nitpick but Hilda does not wear "lunchbox", and she is not doing constant sideflips. Not really a Machinist representation.
Considering how great difference is between player Machinist and Ishgardian/NPC Machinists, i would say there is no NPC representation yet.
By lore yes, not by the gameplay. NPC Machinists just shoot bullets out of their rifles while standing on the ground, while player blasts heat while doing sideflips. I know i'm nitpicking too much, but i just want a gunner job, not acrobat with a blaster.
All good, but, honestly no.
He's specifically in lore a Gladiator. He's basically the top level Gladiator who never got the paladin soul stone.
Also, you missed Dancer. Now since (in Spoiler)
Shadowbringer basically made all Final Fantasy games connected to the Source. Cloud from FFVII is the Dark Knight main character. His motorcycle is already in-game, and umm the Dark Knight guy seriously channels Cloud's essence.
BRD: Renda-Rae. Part of Ardbert's party (or Ardbert himself in 1.X).. Her ShB story bits are pretty cool if you do the job quests and her attitude if you watch the 1.X opening trailer is fun.
Nyelbert: "Pssh, You'd sell your own mother if the coin was good"
Renda-Rae: "My father too!"

Lyse isn't a Monk of any sort. She is trained as a pugilist.
Alphinaud isn't a Scholar. No faerie. No special knowledge of Nymian tactics. Alphinaud is an Arcanist.
I see no signs that Haucherfant has any Paladin training. He is an Ishgardian knight. If you want to shoehorn him into the class/job system he would be a gladiator, same as Raubahn who has close to nothing in common with Dark Knights.
Note that most of the NPCs do not belong to one of the advanced Jobs. They mostly belong to the base classes.
Monks don't really have many iconic characters to go off of in the game... but even though we spend a lot of time with Lyse, I'd still say that Godbert Manderville is a more impressive monk. At least he has suplex. I don't even have the ability to suplex.
Except he's a Goldsmith.
He can even use GSM Limit Break.

Combat Smith Limited Job when?
Also, I think Widargelt is a best example of a monk - at least in spiritual aspect of the monks. He basically changed his whole mentality and lifestyle. He's not the strongest monk, but his story and character development demonstrates how he found his own path of monkhood.
